Cowboy Blues Cashew Lime Crème

This simple yet flavorful sauce is all about versatility. If you’re not familiar with eating cashews in a dressing form, think of the creamy texture of a Caesar dressing, but lighter and more refreshing at the same time.  Even a breakfast Tofu Scramble, Omelet or Huevos Rancheros would brighten with the addition of the Cowboy Blues Cashew Lime Crème’.  This sauce has no borders so play with it and have some fun!

Ps. Be sure to double this recipe if you’re cooking for a crowd!

 

4 oz. Cashews soaked in water for at least 4 hours

4 tsp. Cowboy Blues

2 tsp. Dijon

4 T Lemon Juice

1 tsp. Salt

2/3 c. Water

 

Drain your cashews and place them in a high-powered blender with all the remaining ingredients.  Puree until smooth and creamy. Store refrigerated in a glass jar for up to a week. 😊
